Homemade Marshmallows

This one’s for my husband, because he’s been wanting to make these for MONTHS! They were actually pretty easy to make even though it looks a little intense. What took the longest was gathering and measuring all of the ingredients….and my photos. WOOPS! Haha!

This recipe was used directly from Joshua Weissman on YouTube. You can check out his video as well. The only difference is…ours are MICKEY SHAPED!!

Ingredients

  • 1/4 cup potato starch and Powdered sugar for dusting (equal parts)
  • 1/2 cup water
  • 3 envelopes plain gelatin
  • 1.5 cups sugar
  • 1.25 cups light corn syrup
  • 1/2 cup water
  • 1 pinch of salt
  • 2 teaspoons vanilla extract

Directions

  1. Add half a cup of water and 3pks of gelatin to your stand mixer bowl. Give it a little stir and let it hang out in there while you do the rest.
  2. To a medium to big saucepan add sugar, corn syrup, 1/2 cup of water, salt. Mix and bring to a low boil. Make sure the heat isn’t to high and bring the temp to 240 F.
  3. Once it reaches temp, remove from heat, let bubbles subside a bit, and start your stand mixer. Drip the hot sugar down the side of the stand mixer bowl and at the same time slowly increase the speed.
  4. Once it’s super fluffy and thick, pour it into a pan dusted with the potato starch/powdered sugar mix and let that sit overnight. (or until it’s cool)
  5. Dust the top with your starch mix again and also grease and dust anything you’ll be using to cut your marshmallows. Cut them to any shape and dust them again! That’s it! Enjoy your yummy homemade marshmallows!!
